Nightly specials Monday through Sunday range from suckling pig, osso buco and Branzino to calamari stuffed with lump crabmeat or Italian white anchovies, so there is guaranteed to be something for everyone. It is the excellent service, however, that is responsible for Osteria Latini’s warm and friendly environment. Once inside, you will be taken away from your daily grind as you settle into its inviting atmosphere. Located at 11712 San Vicente Blvd, Osteria Latini is open for lunch Mon-Fri and dinner seven nights a week. Reservations are recommended, especially on weekends when the line can be out the door.
From the sun-kissed coast of Los Angeles, California, to the rugged country of northern Italy, Paolo Pasio has integrated the many flavors of his varied life into the cozy, warm eatery in Brentwood known as Osteria Latini.
Born in Trieste, Italy, Paolo got his start in the business at the age of 15, working as an apprentice at a local restaurant. He learned how to make appetizers, salads and other dishes quickly, and soon began work as a pasta cook at “Osteria Alle Bandierette” in Trieste. After only one year, Paolo’s natural talent was rewarded and he was promoted to Head Chef. Paolo spent his days learning the ins and outs of the business until he was ready to venture out on his own. At age 22 he opened his first restaurant, “Martin Pescatore”. Specializing in seafood, the restaurant was located in the small town of Ronchi dei Legionari between Venice and Trieste. He was highly successful, with the restaurant entering the “Michelin Guide” after only one year! After seven years of thriving business, Paolo felt it was time to move on. Coming full circle, Paolo took over as owner of his former employer, “Alle Bandierette”.
In 1991 Paolo took a three month vacation to Los Angeles. It was at this time that he fell in love with America and, upon returning to Italy, he quickly sold everything he owned and moved to LA. Speaking no English, Paolo began working as a busboy at Toscana while taking classes to learn the language. It wasn’t long before he was promoted to server, then manager. Soon after, Paolo was sent to mange the Hollywood Cantina, which shortly thereafter, he bought, thereby launching his career as an American Restaurateur. His next venture was acquiring the Mulholland Grill in Bel Air. Members of the Bel Air community know this restaurant as the friendly, neighborhood eatery with food so good its clientele have been known to eat there three to four times a week. The Mulholland Grill quickly became a success. After five years, Paolo had an opportunity to purchase a place in Brentwood, a location he had always desired, and so, Osteria Latini was born.
It has been only nine months, and Osteria Latini has already made its mark in Brentwood attracting a wide-ranging clientele including A-list celebrities and highly successful professionals and entrepreneurs. However, it is the cozy atmosphere, creative menu and mouthwatering dishes that have allowed Osteria Latini to find its niche in this highly competitive neighborhood. With an eclectic mix of traditional Italian cuisine to perfectly executed fusion creations, Paolo is sure to continue his success in Brentwood for many years to come!
